This Chicken Cashew recipe has a nice blend of textures, and it's rich in protein.
INGREDIENTS: ☑️ 2 cups brown rice ☑️ 1 small onion ☑️ 300g unsalted cashew nuts ☑️ 400g edamame beans ☑️ 500g chicken breast ☑️ 3 tsp salt ☑️ 2 tsp curry powder ☑️ 1/2 tsp chilli powder ☑️ 1 lemon or lime ☑️ 1 tbsp butter ☑️ 2 tbsp oil
Slice 500g chicken breast. Marinate them with one lime juice and 1tsp salt and set it aside.
In a pot over high heat, add 2 cups rice, 1 tbsp butter and 2 cups water. Bring it to a boil, turn the heat low, and cook for 35-40 minutes.
Fry the marinated chicken and add 2tsp curry powder and 1/2 tsp chilli powder.
In a bowl, grate one small onion and fry it in a pot until golden. Then add 300g unsalted powdered cashew. Fry it for 4-5 minutes. Add 500ml water and bring to boil. Let it simmer for 4-5 minutes. Then add the fried chicken slices and 200ml hot water, and 1tsp salt. Put a lid on and cook for 35-40 minutes.
Cook 400g edamame beans for 5-7 minutes.
In a serving dish put the chicken, rice and edamame beans.
