    With this Roast Stuffed Chicken recipe, you'll get a juicy, herby and flavourful chicken.

    Step 1

    INGREDIENTS: ☑️ 1 whole chicken ☑️ 1onion ☑️ 5 cloves garlic ☑️ 1/2 cup chopped walnuts ☑️ 1 cup chopped parsley ☑️ 1 cup chopped dill ☑️ 1/2 cup chopped basil ☑️ 1/2 cup chopped rosemary ☑️ 1 lemon / lime ☑️ 4 tsp salt ☑️ 1 tsp turmeric ☑️ 1/2 tsp chilli powder ☑️ 1 tsp black pepper ☑️ 6 tbsp tamarind paste ☑️ 50g sun-dried tomato ☑️ 1/2 cup raisins ☑️ 2 tbsp oil ☑️ 1 tbsp melted butter

    Step 2

    Marinate the whole chicken with one lemon or lime juice, 2tsp salt, 1tsp turmeric, and 1/2 tsp chilli powder.

    Step 3

    In a pan over medium heat, pour 2tbsp oil the fry one chopped onion until golden. Then add one cup chopped dill, one cup chopped parsley, 1/2 cup chopped basil, 1/2 cup chopped rosemary, 2tsp salt, 1 tsp black pepper, 6 tbsp tamarind paste, 50g sun-dried tomato, 1/2 cup chopped walnuts, 1/2 cup raisins, five cloves chopped garlic.

    Step 4

    Cover an oven tray with foil or parchment paper and put the marinated chicken on that. Fill the marinated chicken with the fried mixture and bring everything together in a nice compact.

    Step 5

    For a juicy chicken, cover it with parchment paper and then with foil.

    Step 6

    Put it into a pre-heated oven (200C) for 45 minutes.

    Step 7

    After 45 minutes, bring it out of the oven and put the foil and parchment paper away. Then brush the chicken with melted butter and put it back in the range for another 30-45 minutes.

    Step 8

    Serve it with cooked or fried vegetables.
